Strawberry granita has got to be one of the best summer foods! It is also incredibly easy to make and only takes 5 minutes (plus freezing).
The recipe is my mum’s, but I think it was originally inspired by Delia! There are only 3 ingredients:
175g caster sugar
3 tbsp lemon juice
To make it you just blitz the strawberries using a food blender, then add the sugar and blend again. Then add a pint of water and the lemon juice and blend one more time. Pour it all through a nylon sieve into a freezer box. Pop it in the freezer and stir with a fork every few hours until it’s completely frozen. The stirring creates the prettiest ice crystals.
It is so refreshing, and not too sweet, just incredibly strawberry-ish!
