I can’t resist the smell of quinces; so sweet and delicate. I like to keep them in my kitchen fruit bowl and have a sniff every time I walk past! They fragrance the whole room and I can imagine I’m living in an exotic Moroccan riad.
One of my favourite ways of cooking with quince is a simple quince and apple sauce. I peel and slice the fruits and simmer gently for about twenty minutes with a splash of water. I sometimes add a little sugar or honey. The sauce lasts well in the fridge for a few days and I love it on granola for breakfast. It’s also delicious with greek yoghurt, or even spread on toast!
